Speca Me Djath- Peppers with Feta and Eggs
Piperka as I grew up calling it or speca means peppers in Albanian, djath means cheese in this case feta cheese. One of the first foods that I remember eating when I was a little girl was peppers and feta. My Grandfathers favourite! Especially when the peppers came from our garden. We would always have watermelon at the table as well, watermelon and feta cheese goes so well together.
Today is April 12, my grandfather’s birthday he would have been 100, he was born in 1912. He passed away 13 years ago this coming May, I miss him dearly! This post is dedicated to my Grandfather Haxhi.

Spinach and Eggs
Spinach and eggs makes a perfect breakfast, lunch or dinner! My mother in law makes this and I liked it from the first time I tried it! Its a Turkish dish that I like to make for an easy meal that is nutritious and delicious. I had some souguk so I added some to it for added flavour and texture, I normally just make it with out, both ways are delcious!
I made it in a cast iron pan which makes it even more flavourful, and beneficial….
French Toast with Nutella
I love French toast, I mention in my other post that my mom would always make us the best French toast! She likes hers salty….I like mine sweet!
I grew up eating Nutella, and of course I would eat it with a spoon right out of the jar! I never thought of putting French toast and Nutella together until one day I was like why not? And more importantly why didn’t I think of this sooner!? I mean I always eat Nutella sandwiches with plain bread, and spread it in my palachinka aka crepes, so why not this?
I made the French toast in my Cast Iron pan, which made it even better! It was not soggy, it cooked evenly and quickly!

One thing I remember as a kid was in the fall and winter my mom would make her cinnamon rolls….the same ones she grew up making in Sweden.
My Grandfather and I just couldn’t wait for them to get out of the oven and into our mouths! He had diabetes so my mom did not use much sugar, nor iced them…but I loved them just the same!
She would fill hers with raisins and sometimes walnuts….one thing though they would become dry the next day, so with some experimenting on how to keep them from drying out and staying soft….I figured it out! The secret is yogurt!…
