Funfetti Pancakes – Fluffy Buttermilk Pancakes
Snow day! We were stuck inside today, no school, no work, only fun and play. Made these funfetti pancakes for the kids and they loved it, who wouldn’t love colourful fluffy pancakes covered in maple syrup on a snowy winter day?
It was the perfect energy food to get us going, and brave the snow and dig ourselves out!
I used my recipe for buttermilk-pancakes and added the funfetti to the batter.
It was exactly five years ago on February 2, 2010 that I started my blog. I guess this would be my anniversary or blogiversary post! Well happy five years to momwhats4dinner.com! And what a perfect way to celebrate with funfetti pancakes 🙂
What you will need:
- 1 egg
1 and 1/2 cups 1% buttermilk*
1 1/2 cups all purpose flour
1 tbsp sugar
3 tbsp melted butter
1 tsp baking soda
3 tsp baking powder
1/2 cup funfetti sprinkles
Sift flour together with the sugar, baking soda and baking powder (I just whisk the dry ingredients in a bowl)
Add egg, melted butter and buttermilk to the dry ingredients.
Stir only until blended. Gently stir in funfetti sprinkles.
Heat your non stick pan or cast iron pan.
Using a ladle, spoon batter onto hot pan or griddle and shape into a circle. Cook on one side until small bubbles appear. Flip and cook the other side. Brush with butter between batches if desired.
Makes 6 large pancakes, or 8 medium size like in the photos. You may double the recipe if you need more.
*You can make your own buttermilk with 2% milk and 2 tbsp vinegar

I absolutely love apple pie filling, my mom always made it as a topping for pancakes mmmm so good, I can eat it straight from the pot! Pumpkin Cinnamon Roll Pancakes
Surprised my family this past weekend with these scrumptious pumpkin cinnamon roll pancakes! I actually wanted to make cinnamon rolls, but just didn’t have to the time to wait for the dough to rise…so I made these instead. I used the same recipe for my regular pumpkin pancakes, just added the cinnamon swirl part to it, you can make them plain if you like.
For the icing I made it a bit runny so that it had the consistency of a syrup, you can make it thicker if you like…that is up to you! It was a hit with all, even my mom love them! I actually added the icing in the middle, and folded it up like a taco…I was so hungry and didn’t have the patience to cut into it;) It really was yummy!
I was worried that the sugar would stick to the bottom, but it didn’t! I think its because the pan was hot and I lightly greased it every time I made a pancake.
