My Grandfather always made homemade bread, eating it fresh from the oven with salted butter always tasted so good!
After reading some of the ingredients in the breads we eat, I decided to make my own bread just like Grandpa did!
I noticed though some homemade breads can be dense and heavy, most times because they are made from a bread machine. I personally like a softer, lighter bread….so I went searching for the perfect recipe!
My mom and I tried a recipe from the top of our heads, it was good but a little dense for my liking…so back on the search I was!…
Homemade Flat Bread Wraps
I like to call this lazy lakror! I’ll tell you why….Lakror is an Albanian style pizza that is made with many thin buttered layers of dough, takes a lot of effort and upper arm strength! My mom is a pro at it…..me not so much…I have made it a couple times but I prefer filo as that is straight out of the freezer!
I love the taste of meat filled lakror but too lazy to make it! This is like a soft taco with an Albanian twist! There is something similar to this in Turkish cuisine called lahmacun but the meat is spread on the bread and cooked or left raw, I do enjoy making it that way as well! Both are delicious!
If you choose to spread the raw meat mixture on first, you can use store bought pita or homemade, cook meat side down on pan or grill or you can steam cook it, that is what I do, I don’t like raw meat….

Albanian Cornbread with Feta and Leek – Pispili
This feta and leek cornbread is a family favourite and an old recipe, my grandma grew up on it, so I love making it for her and and for my kids, who love this with yogurt, it actually goes really well with yogurt on the side.
I’ve made this using one cup corn meal, but find it to be dry, so in the recipe I say to use half a cup. If you like you can try making it yourself to see which you prefer.
This is the perfect thing to make for picnics, or something to serve at a party or when guests come over, it’s a nice snack to serve anytime.
