Carrot tarator is delicious and healthy, it’s a carrot version of the cucumber tarator commonly known as tzatziki. I love this stuff! You can eat it alone with bread, or as a side with a barbecue dinner or anything you may think it goes well with.
What you will need:
- 3-4 medium to large carrots
1-1/2 to 2 cups Balkan style yogurt or homemade (may need more)*
2 cloves of garlic
salt to season
olive oil
Peel and grate carrots. In a frying pan add in 2-4 tablespoons of olive oil and cook the carrots on medium heat for 5-7 minutes till carrots soften. Season with salt. Let cool for 10 minutes.
Grate garlic and combine with yogurt, you may need more than one cup of yogurt depending on how much grated carrots you have. You can add a tablespoon at a time if need be.
Season with salt.
Combine grated carrots with garlic yogurt sauce. Drizzle with extra virgin olive oil. Refrigerate and serve cold. Enjoy!
*Balkan yogurt is a 5% fat content type of yogurt, it is close to homemade, 3.25% yogurt is fine too, the thicker and creamier the better the taste. Make sure when you buy yogurt it only has a few natural ingredients, such as cream, milk and bacterial cultures.
