Butter chicken is one of my sons favourite dishes, served with fluffy basmati rice on the side and you have an amazing dinner! Over the years I have experimented with the recipe until I found the best way of making it, some hit and misses along the way. I have made it with packaged flavours but they didn’t hit the spot with me.
My friend Mahreen gave me her recipe for butter chicken, I loved it so much I had to make it myself! She didn’t add ginger to hers, but all I had was ginger garlic paste in the fridge so that is what I used and it worked out perfect! I couldn’t tell the difference really.
What you will need:
- 3 large boneless chicken breast or 6 small chicken breasts
- 1 heaping tablespoon of ginger/garlic paste
- 2 tbsp of chickpea flour
- 4 tbsp balkan yogurt
- 1 tsp ground coriander
- pinch of cinnamon
- 1 levelled espresso tsp or 1 tsp of kashmiri chili powder (depending how spicy you want it)
- 1 tbsp cumin
- pinch of saffron
- 1 tsp salt
Cut the chicken breast into bites size cubes, set aside. In a mixing bowl combine all the ingredients together until turns into a paste. Add in chicken cubes. Marinate for minimum 20 minutes. Preferably a few hours. Bake for 20 mins at 400 degrees.
For the sauce:
- 2 tsp butter
- 4 cloves
- 5 cardamom pods
- cinnamon bark
- 3 semi heaping tbsp of tomato paste
- 1 tbsp ginger/garlic paste
- 1/2 tsp of salt
- 1 levelled espresso tsp or 1 tsp of kashmiri chili powder ( depending how spicy you want it)
- tsp of coriander powder.
- 1 cup 18% cream
- 1/2 cup half and half or 5% cream or milk.
- 1 tsp honey
Melt the butter in a pot or sauce pan, add the cloves, cardamom pods, and the cinnamon bark. Add in the tomato paste and the garlic/ ginger paste and the salt. Str around and cook, add in the kashmiri chili powder and the coriander powder.
Add in the cream and milk, lastly add the honey. Stir and cook on low hear and bring to a boil.
Add in chicken and allow to cook for a few minutes. Taste for salt before serving adjust if needed. Serve with paratha or naan.
