This is my sons favourite non lettuce type of salad, it’s nutritious and delicious! I make it every week, and it lasts a few days, great snack or lunch food!

What you will need:
- 3 bunches of parsley
1 English or Persian cucumber
1 green bell pepper
2 green onions
2 tomatoes
3 lemons
2 tbsp extra virgin olive oil
salt to season
1 to 1 and 1/2 cups bulgur
Add the bulgur to a large heat proof bowl, add 4 cups boiling hot over the bulgur. In about 10 minutes the bulgur will double in size and will become soft. Drain and rinse with cold water, drain.
Rinse parsley and you may chop by hand or use a food processor, it’s what I do, it is so much easier. Chop the cucumber, tomatoes, green pepper and green onion. Place in a large bowl.
Add in the bulgur.
Add in the lemon juice, olive oil and salt. Combine. Taste and adjust seasoning. Ready to serve. Refrigerate leftovers. Enjoy!
