This is a light and tasty salad, perfect for a summers day picnic or lunch food! I don’t really measure when I make foods like this, I just throw stuff in a pot and cook it! Its really simple and you cannot go wrong with a recipe like this.
What you will need:
- 1/2 cup bulgur (cracked wheat)
- 1/2 to 3/4 cup dry lentils
- 1 tomato
- 1 curly or English cucumber
- bunch of parsley
- 1 green onion
- 1 lemon
- olive oil
- salt
Sift through the bulgur to check for stones, then add to a bowl and add boiling hot water, enough to cover the bulgur by 2 inches above the bulgur. The bulgur will absorb the water, drain excess water. Takes 10 minutes.
Sift through the lentils to check for stones, rinse them. Bring to a boil, in unsalted water. Cook till tender, drain and rinse in cold water.
Chop veggies in small chunks.
Combine lentils, bulgar and chopped parsley, tomatoes, cucumbers, and green onion. Add in the juice of the lemon and drizzle olive oil and season with salt. Adjust seasonings before serving. Refrigerate and serve cold. Enjoy!
I have never tried bulgur before, but this is one gorgeous salad so I need to rectify that SOON!!
