This a delicious, different kind of pizza filled with veggies and cheese. They have something similar to this at the Middle Eastern bakery in town. They are called spinach pies or hand pies and in some bakeries, they make them with broccoli. I have a recipe for that on the blog as well. I like to make it like this, it reminds me of lakror Albanian style pizza.
My daughter Dina loves this! I hope you try it out and like as much as we do!
What you will need for the dough:
- 2 tsp yeast
- 2 cups lukewarm water
- 1/2 cup oil
- 1 tsp salt
- 1 tsp sugar
- 4 and 1/2 cups flour
In a large bowl, add water, yeast, and sugar; wait until it gets foamy. Add oil then the flour and salt; work it in. Start to knead until it forms into dough. Drizzle some oil to prevent stickiness, and form into a ball. Let rise cover for 1 and 1/2 hours until it has doubled in size. Punch out the air when it is ready to use.
I usually use my mixer using the dough hook, it makes dough perfectly every time!
For filling:
- 1 bag of spinach rinsed and drained
- 1 large head of broccoli
- 1 red or yellow onion chopped
- salt
- 1 tsp sumac
- 1/2 -1 tsp 7 spice (optional)
- juice of 1 lemon
- 2-3 tbsp olive oil
- Spanish or bocconcini cheese (optional)
Cut broccoli into chunks, boil for a few minutes, and drain. Chop into small pieces and combine with spinach, onion, and seasonings.
Grease a large baking pan, you may cover it with parchment if you like, and grease the parchment as well.
Take some dough (I should have weighed it for you, sorry will do that next time) with your hands and, using some olive oil to help, spread out into a circle. Top with filling, remove access liquid if need be, add slices of Spanish cheese or cut up bocconcini or mozzarella cheese if using.
Take another ball of dough (less dough than the previously made ball), you don’t want a thick crust, so stretch it out with your hands and cover the top and stretch out to cover the filling and meet the end of the bottom layer of dough. Close and seal up the ends.
Brush with egg yolk. Bake at 350 until baked. It takes approximately 25-35 minutes until nicely baked.
You can make one super large pizza or a medium one like in the photo. You can also make hand pies with the rest of the dough, makes for a great lunch idea. Enjoy!
