These cookies remind me of a black forest cake, chocolate and cherries and oh so very delicious. These cookies are so soft and tender, they’re great for ice cream sandwiches too! My kids love it with vanilla ice cream, you can use sweetened whipped cream as well that would be totally yum!
Another great thing about these cookies is how easy it is to make them, call the kids in the kitchen and bake some memories!
What you will need:
- 2 cups flour
1/4 cup cocoa (I use red ruddy cocoa, its a darker cocoa)
1 tsp baking soda
1 tsp salt
1 cup unsalted melted butter
1 cup brown sugar
1/2 cup sugar - 2 eggs
1 tsp vanilla
1 cup semi sweet or milk chocolate chips
3/4 cup chopped cherries
Cut cherries and discard pit.
Melt butter in a 2 qt pot, and allow to cool till its still warm just not hot. In the same pot combine both sugars with butter using a wooden spatula, stir until its nicely blended together.
Add in eggs and vanilla.
Sift together ( I use a whisk) the flour, baking soda and salt,and cocoa, stir the flour mixture into the butter mixture with the wooden spoon. Mix till forms cookie dough, add in chocolate chips and cherries.
Chill cookie dough in the fridge for 10 minutes.
Line baking sheet with parchment, and drop dough by spoonfuls. Bake at 375 for 8-10 minutes.
Allow to rest on cookie sheet for 30 seconds too one full minute, transfer to cooling rack and enjoy!
