- 1 can mixed beans
- 1 can kidney beans
- 1-2 tomatoes cut into bite size pieces
- 1/2 julian cut onion
- 1 cup finely chopped green leaf lettuce optional
- lemon juice and olive oil
Rinse beans in colander with cold water. Transfer to mixing bowl, combine with tomatoes, lettuce if using and onions.
Drizzle olive oil and season with lemon juice and salt. Keep refrigerated until ready to eat.
