In the month of Ramadan we like to incorporate foods that are known to be liked by the Prophet Mohammad Peace and Blessings be upon him. Some of those foods include barley, dates, and pomegranate. These are very beneficial for this time of fasting especially.
There are so many health benefits to all these food items, so either when you begin your fast or when breaking it, this sweet dessert is the perfect thing to start off or to finish the day with.
This is much like my ashure recipe, just a bit easier for Ramadan time.
Dates, barley and pomegranate are all a good source of fiber as well as they contain many other health benefits.
What you will need:
- 1 cup barley
- 5 to 7 medjool dates
- handful of dried cranberries (be generous)
- 1 peeled orange cut into small pieces
- 1 tbsp orange zest
- 1-15 oz can of chick peas (rinsed and drained)
- 1 1/4 cup cane (non gmo) sugar
If desired you can top with these ingredients.

Rinse the barley, and add to a large pot filled with water (about 14 cups worth), add in the chick peas. Cook on medium heat for about an hour, then add in the chopped dates, orange pieces, orange zest, cranberries and sugar, cook for another hour or so or until thickened on low heat.
Serve warm or cold. Top with pomegranates, and if desired walnuts and or pistachios.
