I love my barbecue chicken, and I make it the same way mama always did, I even use the same BBQ sauce! I didn’t have much chicken on hand, and when that happens I turn the meat or chicken in this case into kabobs!
What you will need:
- 4 small to medium skinless boneless chicken breast
- 1 tbsp paprika
- 1/4 tsp salt
- 2 cloves of garlic (grated or chopped)
- 1/2 tsp seasoning salt
- 1/2 tsp garlic salt
- splash of vinegar
- drizzle of olive oil
- 1 cup of your favourite BBQ sauce
Cut chicken into bite size pieces, marinate with seasonings, garlic, oil and vinegar. I don’t usually measure my seasonings, just kind throw it in and mix. If its not orange enough you may add more paprika.
Marinate for at least an hour.
If you are using wooden skewers, soak them in water for 10 minutes so that the ends don’t burn.
You can use as much chicken pieces on each skewer you like, place on a hot grill and close lid, I grill on low heat.
Turn kabobs when chicken looks cooked on the bottom, cover and allow the other side to cook, takes 15-20 minutes depending the thickness of meat and the heat of your grill.
Chicken should be white inside, you may check with meat thermometer should reach at least 165 degrees.
Brush on your favourite BBQ sauce, and enjoy 🙂
