My son loves these banana chocolate chip pancakes, perfect for you Saturday morning breakfast!
What you will need:
- 1 egg
- 1 and 1/2 cups buttermilk
- 1 1/2 cups flour
- 1 tbsp sugar
- 3 tsp baking powder
- 1 tsp baking soda
- 1/4 cup melted butter or margarine
- 2 mashed ripe bananas
- 1/2 cup mini chocolate chips
Beat eggs with buttermilk in a medium bowl. Combine flour with sugar and baking soda. Stir together well.
Mix in dry ingredients into milk mixture stir in melted butter. Add in mashed banana and chocolate chips stir only until blended. In your non stick pan or cast iron pan you may add a tsp of butter or you can omit the butter if your pan is really good quality and the pancakes wont stick.
Using a 1/4 cup measure spoon batter onto hot pan or griddle. Cook on 1 side until small bubbles appear. Flip and cook the other side. Brush with butter between batches if desired.
*You can use pancake mix, follow the instructions on pkg, and add the banana and chocolate chips to it, I would use buttermilk instead of water, for a moist and tender pancake or add 3 tbsp of plain or vanilla yogurt and water.
