Okra or Bamya in Albanian or Turkish, is a vegetable that is good for you and tastes good. Some people don’t like okra because of its texture, but I learned if you cook it in oil before adding the tomato sauce it helps with that, I have to admit I can be picky when it comes to okra but the way I make it is really good, I really love the taste and texture of this dish. My kids love it as well, I usually make rice with it and they enjoy it with yogurt on the side.
What you will need:
- 1 shallot or small onion chopped
- fresh okra or 2 small packages of frozen okra
- 1 tbsp tomato paste
- 1 small can diced tomato
- 1/2 lb lean ground beef
Cook up the ground beef break up into small chunks, until no longer pink.
Cut okra into bite size pieces. Add olive oil to the pot that has the ground meat in it, and add in the chopped onion, okra and tomato paste, cook on low heat and stir occasionally, for about 10 minutes, okra will change colour.
Add in diced tomatoes, and a little water, season with salt, cover and cook on low heat till tender. Enjoy!
