Yayla Corba – Yogurt Soup
This soup is simple to make, yet really tasty and good for you!
If you are not feeling good this is the perfect soup to make you feel better.
It is also a very good soup after fasting a long day in Ramadan.
What you will need:
- chicken broth or water
- 3 -4 heaping tbsp yogurt
- 2 tbsp flour
- 1 egg
- 1-2 chicken flavour cubes (msg free)
Garnish:
- 2 tsp butter
- 1 tsp paprika
- 1 tsp dried mint
In a 4 qt pot make chicken broth , use chicken pieces (or bones). When chicken broth is finished cooking, remove from heat. Transfer broth to a 2 qt pot, if you have extra broth save for another use. If your just using water, bring to a boil in a 2 qt pot add in the chicken cubes, then continue following the recipe.
In a large measuring cup or container mix together the yogurt, flour, and egg whisk all together.
Temper the yogurt mixture with 1/4 cup of soup before add direct to the soup (so that it does not curdle and or lumpy). Whisk in the yogurt mixture fast. Bring back to the heat on low, for a minute or two.
Melt butter with paprika and mint, add over soup and serve.
You can add noodles or rice to the soup if you want, just add to cook before the yogurt mixture.
