Fall has arrived and that means its time for baking with apples! My favourite part! I absolutely love apple pie filling, my mom always made it as a topping for pancakes mmmm so good, I can eat it straight from the pot! I would make these swirls for my kids when they were younger, and they still love it!
What you will need:
- 1 pkg thawed filo dough
5 apples
1 cup apple juice
1 and a 1/4 cup water
1/2 cup light brown sugar + more if desired
1 tsp cinnamon
2 tbsp cornstarch + more if need
2 tbsp melted unsalted butter
2 tbsp light tasting olive oil (or any oil)
For Glaze:
- 1/2 cup icing (powder) sugar
2 tsp milk
Peel apples, and cut into small bite size pieces. Add to a 2 qt pot with the apple juice, water, cinnamon and brown sugar. Cook on medium heat, when the mixture comes close to a boil that is the time to add in the cornstarch, in a small cup or bowl stir in a little water with the cornstarch and spoon into the apple mixture quickly.
If the sauce is not thick enough, add more cornstarch.
Taste it and see if you are happy with the sweetness, you may want to add another 1/4 cup of sugar you desire. Cook till glossy and it looks like apple pie filling, doesn’t take long a couple minutes.
Cool.
Melt butter, and mix with the oil. Roll out the thawed filo, and brush with a little amount of butter mixture. Spoon over some apple filling across the end of sheet of filo and roll tightly, you will be using two sheets of filo for each roll (swirl).
Makes up to 9-10 swirls depending on how much filo is in the package.
Place swirls on a parchment lined baking sheet and bake at 375 till golden, takes about 25-30 minutes.
Stir milk into the icing sugar, if you want it thinner add a tad bit more milk.
Spoon glaze over each swirl and enjoy!
