I love making this apple strudel, its simple and so yummy! It’s a win with children and adults alike! I usually make 2 of them since the puff pastry comes 2 in a package, plus 1 is never enough for us! If one happens to be enough for you then make half the amount of filling.
Apple filling:
6 med size apples
1 tsp lemon juice
1/2 cup sugar, depending on sweetness of apples, to taste
2-3 teaspoons cornstarch
1/2 -1 teaspoon cinnamon
1/4 cup apple juice or water
Peel, core and chop apples to bite size pieces, sprinkle lemon juice over apples to prevent browning.
Add all ingredients to sauce pan, bring to a quick boil so the cornstarch thickens but apples are still firm. Remove from heat and cool
For pastry:
- 2 puff pastry thawed
- 1 egg yolk
- 1 tsp milk
- Course sugar for sprinkle on top
For strudel, thaw out puff pastry roll in the parchment that in comes in to open it up and thin out a bit with rolling pin.
Place in baking sheet, cut slits on both sides leaving approx 3 inches of space to spoon over the apple filling, close up the edges as if your making a braid.
Take the egg and milk mix to make egg wash, spread with pastry brush and sprinkle with course sugar, bake at 400 till golden brown.
