This cookie is like a apple pie in shape of a cookie, a mini personal apple pie! The apple filling is a lovely surprise in these delicate pastry like cookies, perfect for tea time or any time.
My dear friend Candan always made these for me since I can remember, what ever the occasion, here she was with a plate full of these cookies just for me, I miss her dearly as she’s moved away, these cookies remind me of her.

I have provided step by step photos. I hope that I show and explain how to make it well, if you have any questions please ask.
If you have a wooden cookie mold or a cookie molding tool, you can use that as well. In some of the photos I made the cookies using a wooden cookie mold like the one used for mammoul. Just take some of the dough, press it into the mold, add some apple filling and close it up with some more dough, I use plastic wrap so it doesn’t stick and it is easy to mold.
For dough:
- 3/4 cup butter, softened
- 1/4 cup vegetable shortening
- 1/3 cup + 1 tbsp plain yogurt
- 9 tablespoons of sugar
- 1 teaspoon of baking soda
- 3-4 drops of lemon
- 3 cups flour
Apple Filling:
- 3-4 grated apples (5 if they are small apples)
- 3 tablespoons of sugar
- 1 teaspoon cinnamon
- ½ chopped walnuts
Take the grated apples and place in sauce pot with the sugar and cinnamon. Cook on med heat, for about 10-15 minutes until liquid evaporates.
In a mixing bowl, cream the butter and shortening until creamy. Add the yogurt and sugar.
Add the baking soda and drop the lemon juice on top of the baking soda, you will see if fizzle. Add the flour. Mix well till turns into a nice smooth pastry dough.
Flour the surface and roll out dough, not all the dough at once, just like when making sugar cookies. Take a circle cutter and cut into circles.
Fill each circle with a tsp of filling, fold over and close edges.
Bake on a cookie sheet at 350 till golden about 12-15 mins.
Dust with powder sugar
